Last Night Was Monday Night Football with...

THE DALLAS COWBOYS and the Carolina Panthers! The game was so awesome last night. Not to mention I have worked every Monday night since I can remember, and I got a day shift yesterday, on the very day that my Cowboys were playing MNF! I think it was fate.
The first half was a rather boring half to say the least. Neither team scored until the Panthers made their only score of the night. And that was at like 2 minutes left in the half. Then I dont know what Wade Phillips said to them over half-time but the Cowboys came back a totally different team! and they scored and scored and scored! With the final score being 21-7!!! What??? Really?? It was an awesome 2nd half and I'm so glad I finally got to watch my boys play!

And on top of that I made chicken fried steak, mashed potatoes and corn for dinner, with funfetti brownies for dessert. What a perfect ending to a rather chaotic day!

What I Made...

...for breakfast this morning. I LOVE the Egg McMuffins from McDonalds, but I really hate that they almost cost $3. I feel that they are over priced and not worth it. So when I was at the grocery store last night, getting things for dinner, I decided I would try to make my own Egg McMuffin, SkyleRae style! It was so delish and really simple.

Now forgive me for the photo, it was taken with my cell phone and so the pictures well not the best, but it is so so good!
This is the easiest thing to make, and I havent crunched the numbers, but I'm thinking its cheaper than going to Mickey D's, mainly because its made from things that you usually have at your house, maybe not the english muffins but I had everything else.

Egg Muffin Recipe
Yield: 1 egg muffin

Ingredients:
1 egg
1 english muffin
1 slice American cheese (or your preferred melting cheese)
1 slice ham (I used a smoked ham, but whatever you choose)
1/2 tbsp. butter (or what you think to cover the bottom of the pan for frying the egg)

Directions:
1. Place the butter in the frying pan over medium heat, melt.
2. Place muffin in the toaster.
3. Add egg to melted butter, and fry to over hard.
4. Place the bottom of the muffin on the plate.
5. Place fried egg on muffin bottom.
6. Add slice of ham to the pan, and fry it until warm.
7. Add slice of cheese on top of the egg.
8. Place ham on top of cheese and add the muffin top.
9. ENJOY!

This recipe is super easy, so good, and super fast! I hope you enjoy!

I Haven't...

...fallen off the face of the earth. I have been super busy with a suprise for all of you (pictures to come upon completion) and getting ready to go back to school. It starts on Wednesday, I think I'm ready...Well its more like I HOPE I'm ready. Its going to be a jam packed semester and there is a good chance I will want to pull my hair out by Christmas.
So hopefully I will have a post for the suprise soon, because well I need to get it finished!
