I have a New Favorite...

...TV show. It's called Jamie Oliver's Food Revolution. It is to say the least eye opening! If you haven't heard about it, you can check it out on hulu (the greatest thing for when you have to work when your favorite shows are on). This show is so great, and we need more people like Jamie to get out there and throw a fit about what is being served to the children at the schools. I think the worst part about the food programs is that they are so strictly mandated by the government that the cooks feel like they have no choice but to go with the processed foods, just to try to meet the regulations. Jamie is taking that to a whole new level with his show, and showing them that they can do it, and they can do it by starting with raw foods.
It was surprising to me to see the chicken nugget expirment and how the children still wanted to eat it, I was sitting there going, I don't know if I can eat another nugget after this! But the expirment that got me the most was the one he does for the parents. I think a lot of parents are ignorant of what the schools are feeding their children, and assume its healthy because of the government mandates.
Ok enough ranting about that for now. The other big thing going on right now is my BFF over at Rachel May Designs is starting a card club! YAY! If you follow the Christmas Stamping All Year Long blog, it will be similar to that, except we will just have different challenges every other week, and we won't be focusing on just Christmas! To see the guidelines hop on over here to check it out.

And check back for my creation for the Card Club! And I hope to see all your creations as well!

The Adventure of...

...POTATO PANCAKES! So the other morning my mom and I decided we would try our hand at making potato pancakes, mainly because we had a surplus of mashed potatoes from the night before, but beyond that it was a very fun experience and they were delish! And the best part of it all is the fact that they are so so easy! You can see here, that there is eggs and flour and the molded pancakes! The eggs actually were just a side to go with the pancakes, but they made it into the picture. (But after talking to my aunt, after ours were made she said to put eggs in with the potatoes to act as a binder.)

So the recipe is pretty simple, mashed potatoes, flour, eggs, and bacon grease. Mix the potatoes and eggs and form into a patty. Lightly cover in flour, and fry in bacon grease. You need approx. an half-inch of bacon grease.

These are our pancakes frying in the pan, we didn't use as much grease as we needed to, but they were still good! Oh, and you fry until golden brown! So simple and so easy, and a great way to use up left over mashed potatoes. It could easily become the day after Thanksgiving or Christmas breakfast. Before you know it you'll be making extra mashed potatoes just to have potato pancakes the next morning! In the mean time, you already have the bacon cooked, so cook up a couple eggs to go with, any way you like 'em. We did scrambled.
We also were trying to figure out what to put on top of them. We did ketchup mainly because thats all we had, and secondly because we thought it sounded good! We also thought that ranch would taste great, and maybe some salsa! Leave a comment on what else you think would be great toppers for the pancakes! It would be great to hear other ideas!
I hope you all enjoy! Give it a try!
